Zebra

This was requested by a facebook fan. Her only request was red and black, 21, zebra print, and Red Velvet cake. I did a pretty good job considering all the obstacles I ran into along the way.
I hope that one day I can open my own shop, instead of working out of my home. :)

Easier Cooking!


I decided to alphabetize my dried spices according to category. For example, small McCormick's vs. large McCormicks, LiteHouse, Spice Classics, etc.


It makes for much easier cooking because you won't have to spend that five extra minutes looking for a certain spice.


So try and take the time to organize your spice cabinet, it only takes about 10 minutes! Also, throw away the spices you've had for about 6 years because they do nothing for you.

That's a Wrap!

Yields 4 Servings
Ingredients:
2 8oz Boneless Chicken Breasts, grilled and diced
1 tablespoon Olive Oil
Salt and Pepper
1/2 cup Prepared Mayonnaise
1/2 tablespoon Chipotle in Adobo Sauce
1/2 tablespoon Fresh Cilantro
1 teaspoon Fresh Lime Juice
1 Ear of Yellow or White Corn, grilled
1 Poblano Pepper, roasted and diced
1 Tomato, diced
4 Pieces Original FlatOut! Bread
1 Cup Shredded Romaine Lettuce
1/4 Cup Sharp Cheddar, Shredded
Directions:
1. Rub chicken breast with olive oil, season with salt and pepper, grill on both sides until chicken is fully cooked (165F). Cool and dice.
2. Blend mayonnaise, chipotle, fresh cilantro, and lime; Chill until ready to use.
3. Grill corn on cob until charred, roast Poblano pepper on open fire. After skin has blackened, put in small bowl and cover with plastic wrap for a few minutes. Cut corn off cob. Peel skin off pepper; remove seeds and ribs, and dice into small pieces.
4. Mix together grilled chicken, chipotle mayonnaise, roasted vegetables, and diced tomatoes. Salt and pepper, to taste.
5. Spoon evenly over 4 pieces of flat bread; sprinkle with shredded lettuce and cheese.
6. Roll into wraps.
I created this recipe for a Sandwich Contest. I was selected to enter, however something came up so I could not participate. I hope you enjoy, it's a quick and easy meal for a family of four!

Let's go Golfing!


Chocolate Cherry Chocolate Chip Cake with
Whipped Vanilla Frosting
How I made this:
1. Frosting the whole cake with a lighter green.
2. Drew out where I wanted the sand/water/open green to go with a toothpick.
3. Mixed together brown sugar and "Turtle Crunch" sprinkles for the sand and pressed them into the desired spots.
4. Mixed piping gel with blue food coloring and smeared it on the desired spot with a spoon.
5. I used a special piping tip to make the grass around the whole cake.
6. I made golf balls out of fondant and used a little toothpick to give them their texture.
7. The flag is made out of fondant, I attached it to a candy/popsicle stick.
8. The golf club is made out of fondant. To get the metallic look, I mixed together a little lemon juice with edible silver shimmer dust to paint onto the fondant.
9. I dyed fondant red and used letter cut outs for the "Happy Birthday!" section.

Mickey Mouse Clubhouse

I was asked to make a Mickey Mouse cake for a first birthday party. I learned that he loved to watch Mickey Mouse Clubhouse, so I tried my best to create it out of fondant. I made a dome cake for the red base, and the rest I hand sculpted. I bought the litte figurines from the disney store.

There are three layers of cake: Banana, Chocolate, and Strawberry. The fillings are chocolate whipped cream and banana custard with bits of chocolate-covered pineapple. The outer layer of frosting is a Vanilla Italian Meringue Buttercream dyed with green food coloring.

The best feeling was seeing the little boy's face when he saw the cake. It was awesome. He knew exactly what it was, and that it was for him.

I know that I haven't posted in a long time so I apologize. I will be adding recipes again soon. Here are some photos of cakes that I have made throughout the months. I taught myself how to work with fondant, how to pipe, and how to decorate cakes in general. Most of these cakes were made for clients or as gifts from me. I hope you enjoy :)

1st Place Winner at Robert Morris University's Culinary Symposium 2010:
This cakewas made by myself and a former classmate. The theme of course had to be Chicago. The cake was made of styrofoam tiers but everything else had to be edible. It was a great challenge and a lot of fun. My partner and I stayed up all night to finish and the hard work paid off.
